Oyster and Smoked-Ham Stuffing for Turkey

| Ingredients |
| 4 tablespoons butter |
| 2 medium-size onions |
| 1 green bell pepper, diced |
| 3 ribs celery, thinly sliced |
| 2 tablespoons chopped fresh sage (1 tablespoon dried) |
| 1/2 pound smoked ham, cut in 1/4-inch dice |
| 1 cup chopped walnuts |
| 1 cup fresh coarsely chopped parsley |
| 2 cups dry 1/4-inch bread cubes |
| 3 eggs, beaten lilghtly |
| 24 fresh oysters, shucked and diced, liquor reserved |
| Salt and pepper to taste

| Stuffs a 10 to 12 pound turkey |
Instructions
1. In a large skillet melt butter. Add onions, bell pepper and celery.
Saute until tender, 4 to 5 minutes. Add sage, ham and walnuts;
cook, stirring, 3 minutes more. Remove from heat. Stir in parsley, bread cubes,
eggs, oysters and liquor. Add salt and pepper to taste.
