Oyster and Smoked-Ham Stuffing for Turkey

Ingredients
  • 4 tablespoons butter
  • 2 medium-size onions
  • 1 green bell pepper, diced
  • 3 ribs celery, thinly sliced
  • 2 tablespoons chopped fresh sage (1 tablespoon dried)
  • 1/2 pound smoked ham, cut in 1/4-inch dice
  • 1 cup chopped walnuts
  • 1 cup fresh coarsely chopped parsley
  • 2 cups dry 1/4-inch bread cubes
  • 3 eggs, beaten lilghtly
  • 24 fresh oysters, shucked and diced, liquor reserved
  • Salt and pepper to taste
  • Stuffs a 10 to 12 pound turkey    


    Instructions

    1. In a large skillet melt butter. Add onions, bell pepper and celery. Saute until tender, 4 to 5 minutes. Add sage, ham and walnuts; cook, stirring, 3 minutes more. Remove from heat. Stir in parsley, bread cubes, eggs, oysters and liquor. Add salt and pepper to taste.
